Kirsch (Cherry brandy) is the oldest of the fruit brandies.
It was first produced in the XVIIIth century.
Fougerolles is the cradle of this cherry brandy made from the
"guignes" variety, which is a small, almost black cherry with
sweet flesh, harvested in the area. |

6kg of
fresh cherries are required in order to obtain one 70cl bottle
at 45% vol., i.e., 18 kg of cherries in order to manufacture
1 litre of pure alcohol (1 litre at 100% vol.).
Thanks to its exceptional qualities, Kirsch is appreciated
as a liqueur, as a long drink as well as in cocktails.
It is also an excellent ingredient for adding flavour to cakes,
confectionery, ice-creams, sorbets and fruit cocktails.
